Well the wife is working late, so I was left to fend for myself for dinner.. Found 1 package of tenderloins left from last year. Now don't get me wrong, my favorite way to do them is keeping it simple.. salt/pepper on the grill, or cast iron skillet.. but I'm was tired of the same old thing so came up with this.. it was OUTSTANDING. For the rub, I did the following.. ¼ cup finely ground dark-roast coffee ¼ cup chile powder ¼ cup brown sugar 2 tablespoons smoked paprika 1 full tablespoon salt, or a pinch more 1 tablespoon ground cumin Rub your loins with EVOO, and then put a generous amount of dry rub all over. You could grill them, but I decided to blacken them in a cast iron skillet. Put the skillet on the stove, put the heat to HIGH, and let the skillet get burning hot. Don't put any oil/butter in there, just the dry skillet. Once the skillet is screaming hot, throw in your tenderloins for 45 seconds per side, NO MORE! Be warned, your smoke detectors will probably go off lol. After 45 seconds per side, remove from heat, and put the entire skillet in the broiler, about 6in from the flame, for 1-2 min per side. After that, your tenderloins are done. I had 2 avocados laying around that were ripe, so I threw together a chipotle guacamole. You can make it anyway you like best, but this is the way I always make mine.. I didn't measure anything, but I use fresh lime/lemon juice, cumin, onion and garlic powder, salt, pepper, cyanne pepper, chili powder, chipotle pepper sauce, etc.. I sauted' up some fresh vegetables for a side dish, and this was born.. Use avocado oil instead of olive oil as it has a smoke point over 500 degrees compared to 375 for extra virgin.
