What is your favorite steak?

I have had it all - but I will take a properly marinated whole venison loin, grilled to perfection and sliced medium thickness when it's rare.     To me - the best hands down. I am practically addicted to it. I hardly even think about beef

Venison backstrap. Filet and ribeyes.  And I like it rare. No fancy seasonings Salt. Pepper. Butter.

I like the occasional Cute De Beef,  but when it comes time for me to thrown down my best.  Its the chateaubriand straight from the Julia Child books.  You will never have it better, your heart doctor is the only one to disagree.

perfectly marlbed top sirloin. from a butcher, trimmed in front you. not from a shopping center. of course always rare.

i wish i still had a picture of one prior to cooking. it almost looked to good to sear. 

i prefer beef over venison. more fat. fat is flavor.

I mentioned her a few post above. Some of her recipes are classics in my house. We go to the butcher and ask them for certain cuts based on her books and they know exactly what I am talking about.

I love venison and get very creative when cooking it.. that being said, IMO venison backstrap or tenderloin doesn't come close to a good ribeye, or even a skirt steak. I'll take a reversed seared ribeye, cooked in a blazing hot cast iron skillet with butter and garlic any day

Besides Venison I buy a couple Prime Ribs when they're on sale take off the ribs cut into steaks then vac seal for the grill. Never going to pay the prices they charge now.

Funny you said that Jacko. Christopher had the skirt steak and the venison cutlets tonight. He said he like the cutlets more, hands down....
