  1. Yeah is is a New Braunsfels made from probably 10 gauge steel. It should last a little while. I have an in on some of the automated ones at 1/2 price but can’t bring myself to buying one yet. Sent from my iPhone using Tapatalk

  5. Anybody on here still smoke meat the old school way without augers and pellets? I usually smoke 2-3 times a month in my old barrel smoker. It’s about 20 years old but gets the job done. I do have to tend it once an hour to feed it but it produces a ton of smoke and flavor. Tomorrow I’m doing baby back ribs and a shoulder. Sent from my iPhone using Tapatalk

  8. Have to have a Covid test prior to flying and potentially after landing. Lots of rules but the big fishing towns are ghost towns. Sent from my iPhone using Tapatalk
  9. I just booked a flight for next week. Kind of spontaneous and last minute but I will fill you guys in on the details. But in short, solo trip packing light and will be chasing sockeye salmon on the fly rod. I will do this with lots of updates. Sent from my iPhone using Tapatalk
  10. I’m most likely heading on a last minute trip to Alaska.... if I catch a bunch of sockeye I will be making some up. That is some of the best fish to come out of Alaska next to Winter caught King’s and certain runs of silvers. Sent from my iPhone using Tapatalk
  11. Very similar how Ceviche is made with the acid in limes as well as the onions...
  12. When you make lox you are basically using chemicals to cure the fish instead of heat.
  13. Another method to remove the salt which Native Americans do in Alaska is put the chemical cure fish on a board and rinse the salt out. I have taken a long board and had running water rinse if for an hour. Kind a waste of water but in Alaska they use natural streams to do this.
  14. Very nice, also known as Gravalox. I have caught fish in Alaska and had fresh lox the next day. I sometimes do a chemical cure brine and rinse the brine out and do a cold smoke.
