i use an offset. but none the less, i use lump charcoal. not that fake kingsford crap. 

i use my smoker as a "charcoal smoker" and then add wood of my choice. so i use the charcoal as my heat source and use wood for flavor. i get my smoker to whatever temp i am aiming for and then add my apple, cherry, whatever. 

my favorite all around wood is apple. its great. 

these two tools are a must or something simliar.

Step one get rid of the thermometer on top and get a good, big aftermarket one. 
 

There’s also a cool and handy aftermarket lid holder. It allows the lid to be opened and held up like a traditional grill lid. 
 

Favorite wood is wild cherry. It’s great on pork, venison and chicken. Gives great color and a smooth sweet smoke flavor.
