Prime Rib On Sale At Shop Rite

It's that time of year, Christmas Prime Rib on sale at Shop Rite with the pice club card (digital coupon) I just picked up a 7-bone prime rib

I might pivot this year and do leg of lamb.........but i love getting the prime rib. Honestly probably just buy a small one to toss in the freezer for another day.

Tell you what tho. I dont know if anybody else noticed this. But the past few years - everytime i go to ask the butcher for a fresh cut - i get "there's none other out there?" and its like dude you're a butcher, i get it but i want mine cut now not one that was sitting sinnce yesterday morning.

The ones I have been looking at around here look pretty bad. I was going to pull the trigger on one yesterday, but was way to fatty. I think I might do a brisket or a whole KC strip roast.

Best Prime Rib I ever had came from ShopRite three years ago in 2020,  the 2021 and 2022 prime ribs were terrible.  I suppose it's the luck of the draw, I can't tell by looking at them which ones will be tender and which ones will be like shoe leather.  I'm pretty good picking out tender steaks.

Anybody have any tips other than looking at the fat marbling?

Not having butchering knowledge, I had some trouble cutting that whole roast into smaller roast for freezing. Do you remove what I assume is part of the backbone before trying to slice into smaller roast or steaks?
