Shanks on a cold day is like heaven. Put the gravy over mashed potatoes or polenta and you have a great meal!

The meat is so savory and tender.

May now also be one of mine .

can’t believe how tender the toughest part of the deer becomes 

shanks are a pia to clean for ground meat with little return 

the two shanks were more than a meal for two made this way .

also a meal I think even those not liking deer would really enjoy

I smoked some shanks last year.  Gives a bean or pea soup great flavor and the meat falls off the bone ! Better than ham.

Ive been making them for years... when they fall off the bone they are ready.  over some egg noodles or with rice or mashed potatoes they are awesome...
