the meat is mottled, so, even the breat meat looks like a marble rye, but they make an outstanding soup! Just use your favorite soup recipe, but I soup the whole bird, with about a 1/4 teaspoon of pepper corns, half an onion, two crushed garlic clove and salt to taste water to cover bird, then cover and simmer for about an hour, don't let it boil, remove the bird an strain broth into anothe pot, pick the meat off the bird and toss it into the broth, add your veggies and simmer till tender, I use few sprigs of fresh parsley and sill, celery and carrots.
