The shank is one of the most flavorful parts of an animal.  I did some beef sliders for a party 2 weeks ago.  Braised the shanks.  Shredded the meat and mixed the marrow in with it.  Used mini Portuguese rolls.  Did the beef, horseradish cheddar and a vinegar slaw and they were amazing.  Hit of the party.   My chef buddy and his wife were wolfing them down. 

Beef shanks make the best tacos too.

Looks very good.  I miss my neighbor that passed away.  I'd give her venison and she'd make the best soup with fresh cooked tomatoes and veggies.

Love smoked shanks they go in my pea soup every year.
