The shank is one of the most flavorful parts of an animal.  I did some beef sliders for a party 2 weeks ago.  Braised the shanks.  Shredded the meat and mixed the marrow in with it.  Used mini Portuguese rolls.  Did the beef, horseradish cheddar and a vinegar slaw and they were amazing.  Hit of the party.   My chef buddy and his wife were wolfing them down. 

Beef shanks make the best tacos too.
