Thanks everyone.

Roughly 18-20 working hrs
Then they sit in my way for 3-4 weeks to dry. Thsts the worst part about having a small shop and working on turkeys. Nowhere to put them out of my way for the several weeks of drying time.
Also got a huge tundra swan drying now..pics coming soon. Sneak peak here:

If you are waiting on a 2021 bird then no.. none are yours lol. Thses are 2020 birds.
