Venison Chili

Ingredients

  • 3 tbsp. olive oil

  • 3 yellow onion, diced 

  • 6 green bell peppers, diced

    • 3 lb. ground venison, I also add 2 lbs of hot italian sausage 

    • 1215 garlic cloves, minced

    • 6 tbsp. chili powder

    • 3 tbsp. cumin

    • 3 tsp. paprika

    • 3 and ½ tsp. salt

    • 1 ½ tsp. pepper

    • 9 tbsp. tomato paste 

    • 3 tsp. Worchestershire sauce

    • 3 orange, juiced 

    • 3 lime, juiced

    • 3 and 1/2 cups venison or beef stock*

    • 84 oz. whole tomatoes (about 3 cans)

    Instructions

    1. Begin by heating the olive oil in a large pot over medium heat.
    2. Add the onion and peppers and cook until the onions start to brown on the edges, about 5-7 minutes. Then, add the venison and brown. 
    3. Once the venison is browned add the garlic, chili powder, cumin, paprika, cinnamon, salt, and pepper. Saute for 1-2 minutes and then add the tomato paste. Cook for an additional minute, incorporating the tomato paste. 
    4. Then, deglaze the pot with Worchestershire sauce, orange juice, and lime juice. Scrape the bottom of the pot and add the stock, tomatoes, and beans. 
    5. Stir well and bring the chili to a boil. Once boiling, reduce the heat to low, cover partially with a lid and let the pot simmer for at least 30 minutes but up to all day. If you’re cooking longer than an hour, be sure to cover the chili fully with a lid so all of the liquid doesn’t evaporate. 
    6. Ladle up generous portions, top with your favorite chili toppings, and serve.

Only poor people or people that don't know how to hunt put beans in their chili, simply because they can't afford to fill it with real protein or they can't shoot enough to fill it with real protein lol.

Either way there is no such thing as beans in REAL chilli.

 

Not a complete a$$ hole just one of the dingle berries that hang off it.

My wife uses this recipe, don’t let pumpkin scare you, makes it really rich and smooth.  Only variation is venison (obviously), instead of beef; and my Mrs tosses in 3 chopped up chipotle peppers (canned in adobo),  a few spoonfuls of the adobo from the can they come in.
