Got the mix from Curley's called Cody's favorite. 50/50 mix 25 pounds double ground. 160 for an hour and then 180 until they reach 150 internal. I run them up to 158 just to be sure and then ice bath for 5 minutes.  I like to let them sit in the fridge for a few hours then in the bags they go. Cody's mix is spicy and is very tasty.
