Venison Jerky

Broke out the smoker the other day. Time for jerky.  Basic simplicity works for me . Salt brown sugar, garlic powder and some hickory chips. Brine overnight then in the Box.

I Absolutely love venison jerky.  My son & daughter have been devouring it since they were 4 years old ( they’re 14 now). Although, it’s a lengthly process from start to finish, it’s definitely worth it ! 
I process all of my deer, so I can control the exact cuts & sizes specifically for my meat slicer.
My family and friends look forward to a “batch” of jerky every season. 
I will keep enough in a ziplock bag that will last for a week or so ( usually a lot less than that ), and the rest I separate into vacuum sealer bags stored in the refrigerator.

Looks good!  Jerky is always a fail for me.  I end up killing the deer twice; once in the woods and then again in the smoker.

Try a dehydrator. Venison in the smoker can be a tough one to do until you get it down. Both are delicious.

If you want a smoke flavor, you can add liquid smoke to the marinade.
