Mesquite Smoked Wings

Mrs. Rug bought a few lbs of wings yesterday at Wegmans, so I decided to smoke them today.  Rubbed them with kosher salt, fresh cracked pepper, cumin, cayenne, garlic and red curry.  Smoked over mesquite to keep up with the bold spices.  I had some funky raw milk Roquefort cheese, so I whipped up some fresh blue cheese dressing to go with them.  So damn good.

I always hot smoke poultry, from 275 to 350, depending on which piece it is.  

These were small wings so they went 325 for about an hour and 10 minutes.   Skin is perfectly crispy that way.
