Cajun Bear Jerkey - Take 1

What temp do you think it takes to kill trichinosis? My nesco dehydrator goes up to 160 degrees and I Usually put the meat on for 6 to 10 hours.

The meat has to gef to 140 for five minutes internal temp.

Just being in an oven thats above that doesnt assure internal got to that temp.

 

There are also two types of tric parasites that freezing doesnt kill found here.

 

Lunitic i dint think cure kills tric as it s a parasite, cure kills bacteria.

 

I see some guys are dehydrating then finishing in an oven ag a higher temp.

 

Researched a bunch , and would love to find a foolproof method for safer consumption.

 

I like making cutlets on the grill , but according to everythjng i have seen , its not just getting the meat to temp, its keeping that temp for 5 minutes.

Im sure how i have been eating it it hasnt maintained thst safe time

 Foolproof method: make jerky by using your dehydrator. It takes at least 4.5hrs at 160 degrees. That's over the 140 and over the 5 minutes. :happywave:

Internal temps dont equal the dehydrator temps .

Think about it you make a turkey at 350 for 4 hours it doesnt get to 165.

 

No of course the jerky is thinner and i would hope it makes it to the right temp.

But alot of articles say the dehydrator doesnt get the internal temp hot enough.

To finish it in the oven , but not one says how long to do that

 

A usda site said it takes 10 hours of food being in a dehydrator to reach 140

Jerkey would be shot if left that long

Think about it you make a turkey at 350 for 4 hours it doesnt get to 165.

Why are you so afraid of everything? Between the tree stand  safety, guys shooting at your house, uncooked meat and whatever else you worry about it does not appear to me you are having any fun. Just worries :shock:
