Venison Pastrami

Made venison pastrami today and it came out GREAT!! Heres some pics.

On a side note I want to thank @Lunatic, after seeing some of his posts on corned venison I asked him where he bought the Pink Salt because I couldnt find it at my Shoprite, he let me know he bought it from Amazon (which is where I ended up buying it) but he offered to send me some of his if I needed it which I thought was a great offer.

I brined it with 

1 tsp of pink salt 

4 tsp kosher salt

4 tsp of pickling spice

1 tbs of garlic powder

2 tbs of coriander seeds (whole)

2 tbs of brown sugar

Brined it for 5  days..........

Took it out and pat it dry...

I rubbed it with

2 Tbs black pepper

1 Tbs of Ground coriander

1 Tbs of Garlic powder

I smoked it in my Masterbuilt electric smoker with hickory and cherry wood chips.

Smoked for 2 hours at 250 degrees until it reached 150 degrees IT than wrapped in foil  to 160 degrees IT

I let it rest for an hour and sliced it up.
