BBQ Venison Jerky.....pic

I follow the High Mountain seasoning directions first. Then I mix a bowl of Sweet Baby Rays Honey BBQ sauce with a little more HC seasoning or whatever you  like. Red pepper, garlic, you get the idea. Then after the meat is laid out on the trays I do my first baste on the top side. When it is half way done I baste top side again, turn over and baste the bottom side. 

The only problem I ever have is getting jerky belly after eating too much as I am pulling it hot off the trays.

One last thing. I only smoke the "thicker" pieces and it goes very well with a bourbon flavor jerky. I don't smoke other flavors of jerky. You should try it. :up:

A downside to smoking is that timing is more critical. You can easily over dry it. In a dehydrator, not so much.
