Sticky Korean Pork Belly over Rice

Had some pork belly I intended to smoke but again wasn’t I the mood to babysit so i made this for me and the boys . They were happy with the outcome . 
 

Cut Pork Belly into cubes 1x1 if not done so already . Add to a pot of water , (approximately 4 cups) 4 generous slices of ginger , hand full green onions and 4 large cloves garlic sliced . Bring to a boil and let simmer until it appears gray. Remove all content Ms and set a side . Drain water and add 2 Tablespoons of oil (your choice) add pork belly and veggies into the oil Less the ginger . Brown on med heat , let belly render a bit . Once lightly browned add 1/3 cup Brown Sugar , 3 Tablespoons of each , Light Soy , Dark Soy & Rice Wine Vinegar stir continuously until browned on med to low heat . Add 1 cup of water and cover , let simmer for 35-45mins stirring occasionally until moisture mostly removed… served of rice with Freshly Sliced Green Onions .
