Corned Venison Anyone?

I tried Hank Shaw's version last year and somehow screwed it up.

What cut did you use, Archer? Oh I see...look at the picture duh!

Yum! Yes have made corned venison before. Soak few days in the brine… then boil away with some potatoes and cabbage!

I used the large muscle sections from the rear leg of a fairly large deer.

I used the Brine Method.

Leftovers? Make some hash with a runny egg over it for breakfast.

Venison corned beef and cabbage is done. 
Cured 2 weeks in fridge 

I boil the veg separately from venison 

Gives the veg a brighter vibrant color and flavor 

Use the veg stock to moisten the venison 

Make corned beef & hash for breakfast tomorrow and my absolute favorite Rueben sandwiches with leftovers
