all nighter brisket

my plan was to do this next week but the rivers are blown out so tonight it is. 

smoking a brisket all night on an offset smoker

after 3 hours, im starting to spritz the meat, not the fat. i want the fat to render so you dont want to cool it down, you want to cool down the meat/bark/keep it juicy. keep the fat hot.

still have a ways to go. im starting with hickory and finishing with apple.
