Make the investment into one of these.  My Mrs. goes pie wild (apple, peach, sweet potato, etc.), this cheapo tool is a huge time saver.  Takes a little romance to get it tuned just right, but once you find a rhythm it cuts the peeling time (and labor), down to nothing.  I’m sure it would work on peaches too.

This newfangled one looks pretty neat I'm still using my old one.
