Just made this for lunch - came out delicious!

Venison Chip Steak Sammich With Mushroom Gravy

INGREDIENTS:

1/2 pound chipped steak

1/2 pound mushrooms (or 2 small 4oz cans of mushrooms)

1/3 cup sesame oil (EVOO can be replaced)

4 tsp aged balsamic vinegar

1 Tbsp Dijon mustard

1/2 tsp sea salt

1/4 tsp garlic powder

Pepper to taste

4 Tbsp butter

1/4 to a 1/3 cup beef stock

DIRECTIONS:

Saute the mushrooms until soft (3-4 minutes). Set mushrooms aside.

Peel the slices of chip steak apart and marinate at least an hour (oil, balsamic vinegar, dijon mustard, salt, garlic powder, and pepper)

Heat the pan on medium.

Pour the marinade into the pan and add the slices of steak individually (you may have to fill the pan a few times to cook up all the steak)

Watch carefully as the steak cooks very quickly ( 2–3 minutes); you do not want to overcook it.

Remove all the cooked steak to a plate.

Melt the butter in the pan, add the stock and mix well (if need be, add some flour or cornstarch to thicken it up)

Let the liquid simmer; stir and wait for it to thicken and reduce

Add the mushrooms to the pan just to heat up and then pour the gravy on top of the sliced steak on a roll or just eat it on a plate
