Elk stuffed peppers

Made a batch of elk stuffed peppers.  They are super easy to make and delicious.

My version of the recipe:

2lbs of ground elk.  Mixed with garlic powder, salt, pepper, onion powder, parsley. Eyeball this on what you like.  I think pepper flakes would be good if you like a kick!

I add in the uncle bens microwavable rice to save time.  One pouch

add about 1/2 cup of red sauce to mixture and mix it up til incorporated well.  
 

pour the rest of the 28oz tomato sauce into a glass cooking pan to coat the bottom.  
 

core your peppers and stuff them until they are almost over filled.  Lay in the pan and cook at 400degF for an hour to an hour and a half.  You’ll have to fork the peppers if they are firm then it’s got some time.  Once they are soft you’re probably good.

serve it with some juices from the pan and some fresh buttered bread.  All in all the prep takes about 10 minutes the cook times about 2 hours or so.  It’s great for freezing and pulling out at a later date too!
