I actually made some smoked jerky with scoter that I harvested last week and it came out really good! It's all about the prep. Take all fat and silver skin off, brine for 3 days (changing out the water every day), then marinate for 2 days. Then make jerky as usual.

My share of that scoter harvest from today I'm going to again make jerky. The merganser I'll leave for crab bait. :}

Was there a white-winged in there as well? I was in NJ in mid-December and went to Barnegat Light and saw all three species, as well as a bunch of common eiders and Harlequin Ducks.

No white-winged. We had "black" (or I guess some call it "common") scoter and surf scoter.. A couple of those we got today appear to be juveniles.
