I actually made some smoked jerky with scoter that I harvested last week and it came out really good! It's all about the prep. Take all fat and silver skin off, brine for 3 days (changing out the water every day), then marinate for 2 days. Then make jerky as usual.

My share of that scoter harvest from today I'm going to again make jerky. The merganser I'll leave for crab bait. :}
