is that the sear mode? im alittle confused. when i sear a steak the outside is burnt slighty and inside is rare. i couldnt ever imagine smoking a steak. im not sure what you did in the picture. 
The steak was smoked on the low setting from 3-5pm..
The internal temp was low so I bumped it up to 250 or so.
The Recteq 590 is not direct flame like a Pitt Boss with the sear option.
We haven't removed the drip pan for direct flame to sear since it is a different way to cook.
