HONK! HONK! Happy Saint Patty's Day

I wanted to use up some of the goose breasts I had in the freezer, so I decided to brine a couple like you would for corned beef for St. Patrick's day meal. Brined them Saturday, they were ready by Wednesday. Came out quite good, I cooked them in the crockpot on low for about 10 hours, nice & tender but not falling apart. Made them with fried potatoes & sauteed cabbage, traditional boiled vegetables are just too bland. My fussy mother lives with us right now, I told her it was corned beef, she loved it.

I've done it with venison before, comes out real close to beef, just a little leaner & drier (same as goose).
