The disturbing part is the stick resting on the very edge of the cabinet , about to come down with all the kielbasa on it

130 first hour to dry, bump up to 160 turn on smoke, smoke till internal reaches 145 then remove from smoker. Place in a hot water bath till temp hits 154, then ice bath and hang to bloom

Yes I use cure and it took a couple hours to get to temp
