Tough, old, rutting Maine buck backstrap

Took a section of deer loin from my Maine buck and sliced it down for a venison roulade (jelly roll style). 

I stuffed it with sauted spinach and mushrooms, and spread some Gournay garlic and herb cheese on it then rolled it up. Tied off with twine, hit the outside with salt and coarse ground black pepper, then in a hot cast iron skillet with olive oil. Seared it all the way around then put a few more globs of that cheese on top, and in a 400 degree oven for 12 minutes. Pulled it out to rest for 5 minutes and put some more mushrooms and spinach in the skillet and cooked them down for a side. Was paired with a nice Jersey Red from a local winery, perfect combo.

 

Didn't get a pic of my plate but this is what left, for tomorrow.

Heck yeah, I do same thing Spinach mushrooms onions and cheese. All wrapped up like a Swiss Roll.

Looks great enjoy.

I believe it's Nonsense when people put down big old deer. They are some of the best eating IMO, People are able to f#$k up a fawn WHEN not knowing how to cook.

Damn that almost looks better than the rack it came from! and that is saying a lot.       You just marginalized the amazing steak dinner I had at Morton's by the WTC tonight at a business dinner. I thought it was awesome, am a bit stuffed, but now I look at THAT and salivate

That looks really good too. I've used sharp provolone, blue cheese, cheddar, pepper jack but this Boursin Gournay garlic and herb might be the best fit yet.

Thanks all. It was very good but my family actually liked the venison and butternut squash curry I made the other day better, so more of this is left for me.  :up:

Last of the leftovers went for lunch with a side of brussel sprouts roasted with bacon and onions.
