Whitetail31 Posted October 12, 2016 Posted October 12, 2016 If anyone is looking for a great butcher Jorge does a fantastic job he has the cleanest operation I have ever been to. I have been using him since he opened the new shop and am extremely happy with the stuff that he makes. His sausage is out of this world so is his kielbasa. He now offers all different types of smoked meats. I was at his shop today picking up my deer he also does bears as well. His number is 973-940-3078 Rusty 1

He's a retired butcher working now only the five or so months of deer season and travels with his wife the other parts of the year. BHC Posted October 12, 2016 Posted October 12, 2016 Some locals call him the "DEER NAZI" it's his way only.....I heard he called one of the taxidermist up and told him to stop quarting the bears....takes alot of nerve to tell someone how to run their business when that person is sending you customers. Few friends weeks ago inquired information about bear butchering from him, in terms of $1.00 per pound is that hide on or off, he got obnoxious with them
Rutting Buck Posted October 12, 2016 Posted October 12, 2016 I hear he can be a pain in the ass sometimes and if he calls to cthe me get your deer if you need him to hold it a few days it's an issue. I know a guy who uses him and when you get your meat you also get the hide and bones to dispose of as well. Sorry but this is not for me "Your short on ears and long on mouth"
BHC Posted October 12, 2016 Posted October 12, 2016 Also, he charges $150 to skin the bear....now I can understand the $150 if the hunter only wants it skinned, but if the hunter is hiring him to butcher it for a $1.00 per pound then I think in my opinion the skinning should be included, it must be skined to be butchered.....

Nanuk Posted October 13, 2016 Posted October 13, 2016 I'm curious , wouldn't he be able to get a small hopper dumpster to get rid of the bones and pelts ??? I'm not familiar with this at all but I often considered doing this for some local guys and to keep my dad busy but , if it's illegal to get rid of the waste I'll rethink that idea.

If he could he would it would be easier for him to throw the stuff in a dumpster than boxing up and wasting room freezing them. He is a real deal butcher shop with all of the certifications. Rusty 1

JHbowhunter Posted October 13, 2016 Posted October 13, 2016 I have to admit, my first impression of him was the soup Nazi, from Seinfeld, but I was never more impressed with a facility in terms of digital walk in chillers and freezers, clean operating area, etc. Having been there a few more times now, I think he's a great guy and runs a great shop. There is no mystery as to whether you are getting all your deer back. You get the weight before and after. The bones can be a pain to get rid of, but small price to pay for cleanliness and efficiency and cut cuts of meat and good venison by-products.
