Fast butcher turn around time

Dropped my buck off at 9:30 am today at Big Dog in Sayreville and get a text at 1:30 saying it is done. By 5:30 today I am eating deer meat less then 24 hours of shooting him. This is the second time I have used him and the last deer was ready fairly quick also, but this one was really fast. He will be doing all my butchering from now on.  Anyone else have a deer ready this quick?

That is unheard of.

It is also vacuum sealed, he did a great job and nice guy to talk to.

Butchers aren't very busy yet, so not highly unusual.  You won't get that same turnaround when PA, NY and NJ are in full swing with archery and gun seasons.  Also, I don't know that butcher, but do they have walk-in refrigerators and freezers?  If not, they have no choice but to butcher same day so the meat doesn't spoil.  Back in the 70s and 80s it was harder to find butchers that had walk-ins where they could more or less butcher when they had time without worrying about spoilage.  I can recall many butchers cutting deer out of sheds in their back yards where you dropped it off at night and picked it up the next morning.  

 

If you like your butcher, stick with him/her/them!  Many of the ones I have used over the years stopped butchering because of illness, death, etc.  It's always a hassle to find someone new which is why I typically butcher my own these days.

I agree about not being that busy now and don't expect this to be the norm but he had some deer in the freezer. And yes he has a small walk- in next to his garage. He is a small operation, but he also had a doe ready for me fairly quick last time I used him a year or two ago.

Nice fresh venison. I had a heart the other day from a doe my nephew shot it was so good sliced thin with just a little butter god I love that

I agree about the venison, I keep telling myself I am going to try the heart and I never do. I left it with the gut pile.
