Pork roll is the product and Taylor Ham is a brand of pork roll... just like an adhesive bandage is the product and Band-Aid is a brand of adhesive bandage.

 

Taylor Ham is the gold standard for pork roll and people in northern NJ order a Taylor Ham, egg & cheese for breakfast. If the bagel shop serves another brand, it doesn't really matter. Same way if you cut your hand and need a Band-Aid, doesn't really matter if it's Band-Aid brand or some other brand of adhesive bandage.
