How many days out of the year do you actually eat deer meat ?

 

besides the normal uses for the deer I harvest . We make a lot of different stuff .

I honestly eat deer meat in some form almost every day .

There isn’t a day all year we don’t have some type of deer meat in our fridge .

 

few different flavors of jerky .

different kinds of summer sausage .

trail bologna .

few flavors of snack sticks .

enough different things that it never gets old .

Not including using it for sausage, "bacon", jerky, etc, I shoot for twice a week. Usually just me and the Wife. Sometimes other family members too. 

I try to use it instead of beef.

I eat deer meat almost every day. In my house it is practically the only red meat we eat. 

For the last two years I've been shying away from doing much grinding and instead found a bunch of cool recipes that I butcher for specifically, in relation to the specific deer. But this year I'm hankering for some venison burgers too. I don't make much sausage because, honestly, I find pork sausage to be tastier

I had a conversation with my Wife last night when we were eating deer steak. I explained to her that grass fed beef is very expensive and tastes like venison. Can you really trust meat that claims to be "organic" and "grass fed"? A very small amount of cattle is grass fed. Even in countries like Argentina, where 100% of beef was grass fed, they are raising more and more beef in feedlots. 

There is no meat that is more "organic" than venison. That includes other game like Elk, Moose, etc. 

People are raised eating feedlot beef. When they eat grass fed beef (or venison) thay can tell it's different. That's the reason why people shy away from venison (it's psychological with some people too). Not cooking it right will definately ruin it too.

A couple times a week.  Anything you can make with ground meat we use venison. Meatloaf, burgers, meatballs, tacos. My wife makes awesome bacon cheese steaks with the chip steak . I take 20 lbs of cubed venison to Serra sausage in Vineland and they make the best breakfast sausage out of it.

This describes us as well. I cut up my own deer for specific things I want to cook. Make a lot of roasts, some cuts for pastrami, some cuts for fajitas, plenty of cubes for several different uses. Sometimes the hams get frozen whole and sliced for chip steak. A few shoulders get brined and smoked, eaten like ham, and later used for lentil or split pea soup. The neck gets used for barbacoa or in red sauce. We haven't had any ground venison for years. We only eat ground meat 6 or 7 times a year, and my wife will by 93% lean for that. 

In the summer, may only eat it 1 or twice a week because there are lots of fresh vegetables around.

There are many great recipes for ground deer meat. Shepards pie is a favorite this time of year.  Stuffed peppers .  Last week I did a rice ball mixed with browned ground venison mixed in cheese  egg wash and rolled in biscuit batter and fried. was amazing

same with chickens: pastured raised, cage free, etc.  all gimmicks.  even grass fed can be cows in a barn stall and they dump grass in.  we have been getting our beef lately from my wifes cousin raised a couple cows and hes selling it at his cost.    night and day difference.  i refuse to use the ground for anything other than burgers.  its too good to season to hell for tacos or another dish.

Myself and my two boys eat it maybe once a week. With the ground venison I usually use that for making chili but planning on making burgers once I find pork fat to add. I think without adding fat it would be too dry. I have made meatballs in oven with the ground beef with garlic and oil and those are delicious.

Don't just get the fat trimmings too chalky.  I buy pork butt or chops when on sale and use that.  Makes for a better finished product.   For burgers I grind my meat with bacon
