Just took a fresh batch of Summer Sausage and Trail Bologna off smoker, 30 lbs total . Somebody is Gonna be Very Happy for Christmas this Year  !!!! 

Thanks to All the Members that used me to process this year . I had a great opportunity to make friends while providing a service . Hope you have a successful rest of the season .

Well if you use Venison only it’ll need a fat of some sort . I’ve used beef but find that the pork is sweeter and doesn’t render as quickly . If it’s dietary restriction then it’ll work but just not something I’ve done with frequency .

Don’t worry I made a batch of my own so we’ll have some for the trip don’t panic 😉
