I do have family still there as does my wife

During the summer my wife makes Ciambotta. It's made a few different ways depending on the region of Italy.  Our region it's made with fresh eggplant, zucchini, mushrooms, tomatoes, peppers, eggs with pecorino....very light, healthy and filling
