Real good Joe. I bleed them as soon as I secure them to the kayak and when you fillet keep the knife away from the skin to eliminate the skin fat and remove the lateral line.  Solid white meat at that point.

More than I expected.  I was completely soaked.  A couple guys nearby bass fishing were taking in the show and took pics as it was going ape as I got a gaff into it.
