That rainbow been in the stream a while, the flesh is always very "white" right from hatchery...  Turns orange the longer they are "off" the pellets and have to eat bugs, larvae and fish to survive.

Nothing spooks deer more than my stank…

Idk I'm not a biologist but it taste good I got him on my very own hand tied San juan worm well below the handicap fishing spot

 

I can tell you nothing tastes worse, than a holdover rainbow out of the Paulinskill.  Caught a pair of 18" rainbows several years ago on opening day, that were from the prior fall stocking... Tasted like a combination of dog shnit and pond scum, and I pride myself in my fish and game cooking.   That is one stream I won't keep a holdover out of any longer.

Jh rest assured my pallet and taste buds are very sensitive I'm very picky with fish and Meats.this was a fine tasting fish I actually enjoyed it more then the tog a little butter in the skillet black pepper and Adobo on the fillets and seared it was good

 Whats wrong with the Paulinskill?..polluted?.. from what I understand wild tastes better than pellet fed fish..

 

Last time I kayaked the Paulinskill a few years ago we had to paddle around the cows wading through it.

Check out paulinskill lake in late spring through summer. Dark brown water with flotillas of green scum on top. Below the falls is nutrient rich water but the fish taste like crap from there to Blairstown if they been in that water too long. Flatbrook - no issue that water u could drink when it's running gin clear
