We had buffalo style cauliflower, but it didn't make it to my plate yet.

No brine? It doesn't look dried out either.

I brined it....simple salt water solution. I didn't use the water pan at first, but I had too many coals lit, so I ended up putting water in halfway through to try and cool it off.

 

It wasn't dry per say, but I've had juicier.
