LPJR Posted April 8, 2023 Share Posted April 8, 2023 5 lbs of pork bellies just finished on the smoker. Did them to bring up to the Flatbrook in the morning. Rubbed with Jake's Grillin' Old Fashioned BBQ Pork Coffee rub and finished at 170° internal temp. These blow away the smoked burnt ends that I did over the winter. Pics below... I asked the butcher there if they had any left and she said she could cut whatever size slab of it I wanted. Got two @ 2.5 lb slabs each and took @Haskell_Hunter's advice and left them whole on the smoker today. Sliced them up when they were finished. The cutting board was soaked from the juice.
