Jerky and snack sticks

For those making jerky and snack sticks: smoker or dehydrator?

Doug, two things to consider here.

 

Jerky is a whole muscle which you are trying to remove the moisture from at a low temp. You can certainly give it some smoke for a hour or two and then finish in your dehydrator or oven.

 

Snack sticks however, is ground meat. You are not looking to remove all the moisture from it, just bringing it up to a safe internal temperature slowly. I give my sticks 3hrs of smoke, and can finish 5lbs in around 8 hrs total time. All in the smoker. I bring my sticks up to an IT of 152 before removing .
