I never bother filleting . I just throw the whole fish right on the grill.

Nice size trout!  Congrats on the catch and enjoy.  Definitely wasn't a fly fishing only or catch and release stretch of water.

I usually throw stream trout back  but do the same when I keep a couple of recent stockies.  If fishing a lake, I throw back lakers & keep brown or rainbows.  If I get a big enough trout, I cut it into steaks like they do with salmon.
