He said he tried it in the past and didn't like it- saying it was like shoe leather. This guy owns an Italian Restaurant by me and has made and had everything imaginable. Told him I was making venison cutlet parm tonight and wanted him to try it. I think his mind will be changed when I get it to him tomorrow night. I ask Frankie to butcher my deer into ALL cutlets when he processes them. To me, this is better than veal parm, especially when the cutlets are pounded out paper thin and cooked medium rare. Gotta love the protein. I put some plain breaded cutlets aside for my kids who like it with or without the sauce. My son just came home and is tearing through them haha. Cooking them medium rare is the key, that is the only way I will cook venison and when someone asks me to cook it more I tell them they can ruin their own dam meat.
