Smoked porcini mushroom venison sausage

Tracey was busy today .

trying a new recipe .

70/30 venison to pork , ground dried porcini mushrooms , along with shallots , garlic , sage , rosemary , pepper , milk powder, curing salt  , red wine .

Smoked 90 minutes .

 

another venison winner .
