Trigger Fish Ceviche

Decided to try making some with triggers from the other day. I have not had Ceviche in 25 years so I'm not sure if it is good or just ok. Took some to my uncle and buddy Isaac. So I will see what they thought.  Tasted pretty good to me. 

I only used lemon juice and not lime. The first picture is before I mixed the trigger fish with the rest.

I haven’t made it in a few years, but I always noticed a major difference in the quality between using juice versus making the citrus fresh. Maybe it was because I was making it, so it was in my mind, but that was always one of the biggest things for me. Yours looks delicious 🤤
