Venison Roast in Guinness Beer Gravy

Love making this, especially on a day like today. Threw everything in the crock pot at about 10am, went hunting, and this was done when I got home. Quick rundown of what I did:

 

-Season a venison roast with a good amount of salt, pepper, onion & garlic powder, cumin, oregano.

-Sear in EVOO in a cast iron skillet, on all sides. 

-Sautee' carrots, onion, celery in same skillet for about 7 min. Add about 5 minced garlic cloves, and cook another 3 min.

-Dump veggies into crock pot.

-Place browned roast on top of veggies.

-Add about 3-4 chopped up potatoes to the crock pot.

-In same skillet, melt half stick of butter, add about 1 tablespoon of flour, and whisk non stop for about 1-2 min. You want to cook out the flour taste.

-Add 1 and a half bottles of Guinness beer, about 1 cup beef broth, few glugs of worcestershire, little bit of soy sauce, and keep whisking till well combined. 

-Add half a small can of tomatoe paste, and about 2 table spoons of brown sugar. Whisk again to combine.

-Dump sauce into crock pot on top of meat and veggies. Cook on high for 4 hours, and low for the next 4 (8 hours total.) 

- Top with parsley. 

-Butter up some good rye bread.

-Pour yourself a good red wine, and enjoy.
