wild turkey fried rice

Here's one I don't think I've tried yet... Tonight's dinner is Wild Turkey Fried Rice... it came out really good. 

(oh... and... avert your eyes @bushden - it has rice in it :D)

I used medium-grain white rice - but I think any rice would do. I also used coconut oil to add a touch of sweetness to the overall flavor (it's very subtle, might not be appreciated by the untrained palate :))

Turkey Fried Rice

INGREDIENTS:

1 wild turkey breast, diced

6 tsp oil (coconut, but vegetable can be a substitute), divided into 3 equal portions

2 eggs

1 small bell pepper, chopped

1 small onion, chopped

Soy sauce, as needed (you can try Teriyaki sauce if you prefer)

2 carrots, sliced

2 cups cooked rice, any type you'd like (white, brown, wild)

1 cup broccoli florets

DIRECTIONS:

Heat wok (or any frying pan) with 2 teaspoons oil.

Add pepper, onion, carrots and broccoli florets. Cook until crisp, yet tender.

Remove vegetables and set aside.

Add 2 teaspoons oil to wok.

Add eggs and scramble until cooked. Set eggs aside.

Add remaining oil to wok.

Add turkey breast and stir-fry until cooked, about 10 minutes. Add soy sauce to taste.

Return vegetables and eggs to wok.

Add rice and additional soy sauce, as desired.

Mix thoroughly and serve hot.

I love wild turkey and use it for meatloaf, meatballs, burgers and turkey parm but I could never acquire a taste for RICE except in stuffed cabbage.
