Venison Cheese Steak Egg Rolls

I posted a pic of these in a thread yesterday and got a few PM's asking for the recipe/instructions. They are super easy, and really good. So I took venison cutlets, and used a meat mallet to pound them down super thin. Once thin, I just diced up the meat, almost to "steak-um" consistency. I diced a bunch of onions and peppers really small. Heated a small amount of olive oil in a pan. Sautéd them till fairly soft. I then added the meat. Seasoned with s&p, onion & garlic powder. Then added a couple splashes of brandy and worcesershi...however the F you spell it sauce. Keep mixing around till the meat is cooked. My wife found egg roll wrappers at shop rite. Add 2 tablespoons of the mixture to the egg roll wraps, along with 1 slice of American, and 1 slice of Provolone cheese. Now to assemble them...This is the part I recommend looking up on youTube.  You make an egg wash with 2 eggs, and just a little water. You use this as a "glue" to keep your egg rolls together. If you look up vids on youTube, it will show you step by step how to stuff and fold egg rolls. I put them in the air fryer for about 15-18 min total, flipping once halfway through. You can deep fry them in oil, and they'll be ever better.. but just not as healthy. I think that pretty much covers it.
