Ran the smoker yesterday to finish up Christmas Gifts.

Lem jalapeno summer sausage with habanero cheese,  pepper sticks and brined and smoked a shank for split pea soup later this week.

All came out great but puts a big dent in the freezer lol

Not a complete a$$ hole just one of the dingle berries that hang off it.

Everything looks great !! Sticks came out terrific .  Those are my achilles , never can get them right texture wise . They’re edible but not so good looking .

Texture and consistency were never an issue, I smoke with a homemade charcoal smoker and burn oak and apple for my smoke.

Took a lot of failed attempts to get smoke and temperature right.

I use dry chunk wood, I try and keep smoke to a minimum so flavor is lite and not bitter
