Venison Bacon

After seeing  a post a while back I ordered a small package of Curleys sausage companies venison bacon. Well it came out really good so I ordered the 25lb. kit and went to work. The mix is 50/50 venison/pork and is pretty easy to make. You double grind all the meat and mix it together with the kit, form it in some pans and let it refrigerate overnight. The next day it goes in the smoker for a total of 4 to 5 hours and then it gets finished up in the oven for about another 3 hours. Once again refrigerate overnight and slice the next day and chamber vac. I now have 50 half pound bags of bacon. It definitely is a hit with the kids.

I have an old  slicer that does a pretty good job. We cook it with some slices of regular bacon for the grease in the pan. It's pretty addictive.

looked slicer done in the chamber bags, but looks like it was cut pretty neatly in the silver tins to a thicker slice
