In full sun the white patches almost always get overexposed. These pictures were taken at the end of the day when the light is nice and soft.

The problem is with dark subject with white patches. The camera gets tricked, thinking its a dark object and the white gets overexposed.
If you taking shots in bright sun get as much speed as you can get from your camera and you may get lucky and ISO at 100

That duck in the second picture is a hen green wing teal. If it were a blue wing the bill would be longer in comparison to the head and a bit flatter. Similar to a northern shoveler. 
 

great shots of the hoodies, great birds for photography for sure!

The white patch matches as well
