Smoked leg of lamb this weekend

I smoke lamb quite a bit too.  Some people think lamb tastes gamey (not I) and the smoke mutes that for them.  For me, meat is good and smoked meat is better.

I agree too on the roasting temperatures versus simmering temperatures.  Cuts of meat that are already tender need to be roasted versus tougher cuts which need to be simmered, IMO.   Leg of lamb unless cooked to a frazzle is a prime, not a tough cut.
