I’ve had a terrible yr with woodcock. I missed a large part of novemember with my dog being I injured but I only got one I central jersey the last 2 weeks

 

im hoping they are still in south jersey and I can get some this month

Fillet the breast. Cook the little breast meat medallions in a hot pan for just a minute not so on each side. If they are cooked beyond rare, they are overcooked.  They won’t need anything else.

Central Jersey is between 78 and 80.  North of 80 is North Jersey,  everything south of 78 is South Jersey.
